Pineapple Express Chicken Recipe

Hello from the kitchen! For those of you who would like just a taste of our Aloha Christmas party's dinner, here is the recipe for the chicken dish we served last night. Hope you enjoy! :-)

Pineapple Express Chicken:
1.5 pounds boneless skinless chicken breasts (cut into strips or chunks)
1/2 tsp salt
1/2 tsp curry powder
2 T olive oil
1 red bell pepper, cut into strips
1 pineapple, peeled, cored and cut into chunks
1 serrano pepper
1/4 cup sweetened coconut milk
1 T brown sugar
Makes 4 servings
Directions:
1. Sprinkle chicken with salt and curry powder.
2. In a large skillet, heat oil over high heat
3. Add chicken and quickly brown chicken on all sides
4. Reduce heat to medium high
5. Cook about 12 minutes or until no longer pink
6. Transfer chicken to a plate and cover to keep warm
7. For sauce, in skillet add sweet pepper, cook for 3 minutes
8. Add pineapple and cook for 5 minutes or until browned. Add very finely chopped (in food processor) serrano pepper and cook for 1 minute
9. Stir in coconut milk and brown sugar and heat through
ADDITIONAL
~Toast coconut in the oven for ~10 minutes and sprinkle on finished dish

Serve with brown rice and Hawaiian rolls
